Jason and Erica Keesling plan to open E&J's Eatery in the former Cottage Market building at Main and Park in mid-April.

Restaurant to open on Main

A new restaurant is opening in downtown Valley Center.

E&J's Eatery, an offshoot of the food truck Snack Shack & Us, plans to open at 200 W. Main Street by April 14.

Husband-wife owners Jason and Erica Keesling are leasing half of the first floor of the former Cottage Market building.

Erica said the eclectic menu will be similar to its Snack Shack fare with barbecue combos, nachos, burritos and the popular Mac Cup. E&J's also will serve waffles, cinnamon rolls and other breakfast items.

"We're going to serve waffles with everything on it," Erica said.

Though hours aren't set in stone, their plan is to open from 10:30 a.m. to 7 p.m. Tuesdays through Thursdays and 8:30 a.m. to 9 p.m. Fridays and Saturdays.

The restaurant will have several tables for inside dining.

Erica said they hope to make the restaurant child and family friendly.

Erica said the company's interest in Valley Center started when Snack Shack was asked to serve at an event for teachers at Valley Center High School. The company had been looking for a facility for their business. They drove past the former Cottage Market building and saw a "For Rent" sign in the window.

Erica said she researched Valley Center and discovered there were no other BBQ restaurants and hundreds of new homes were in the works.

They tested the waters by bringing their Snack Shack food truck to Valley Center on Thursday nights the past few weeks.

"The town has been very supportive," Erica said.

The couple is training their 22-year-old son to be able to help in the business, including the food truck, which they plan to continue running. The truck has been set up in Augusta, El Dorado, Clearwater, Garden Plain and other small cities. The truck participates in a monthly motorcycle run to Cassoday.

The couple has been running the food truck for four years, full-time since last November. They had a drive-through restaurant in Andover for six months. It shut down after the Andover tornado last summer.
